Overview
Princeton University invites applications and nominations for the position of General Manager, Campus Dining in New Residential Colleges East and West.
Campus Dining is an integral part of University Services, which is a comprehensive auxiliary enterprise whose mission is to provide the highest level of service that supports Princeton's educational mission, by meeting and exceeding the expectations of the campus community. In addition to Campus Dining, the departments of Business Services, Campus Support Services (AV Services, Performing Arts Services, Venue Services), Conference and Event Services and University Scheduling, Housing and Real Estate Services, Print and Mail Services, The Service Point (integrated customer service center), Talent and Organizational Development, Transportation and Parking Services, and University Services Administration (which includes Finance, Communications, and Information Technology) are also housed within University Services. The General Manager collaborates with all departments within University Services and contributes to the overall success of this auxiliary service department.

In collaboration with the Executive Chef II, the General Manger oversees all aspects of a newly developed residential dining facility. The General Manager is responsible for hiring, training, and developing a team of approximately 50 front line associates. In collaboration with the Executive Chef II, the General manager will oversee all aspects of the board plan dining program including the dining menus and meal plans. In tandem with the Executive Chef II, the General Manager assists in fostering the strengths of each team member and broaden perspectives to execute an exceptional culinary program, which will meet and exceed customer expectations.
The General Manager is responsible for assisting the Residential Dining team in the planning and management of all service, production, personnel, and financial aspects of the Campus Dining Board Program.
The General Manager must have a robust operational background and a good understanding of how to identify, develop, and implement changes resulting from food service trends, culinary objectives, and sustainability practices. This position creates an environment where all are encouraged to suggest new ideas and must possess the ability to carefully evaluate these ideas. The successful candidates must be able to respond quickly to changing business needs and priorities and to balance strategic thinking with tactical implementation.
The General Manager must have a strong commitment to providing excellent customer service to both internal and external constituents; be able to obtain first-hand student information and use it for improvements in products and services; act with customers in mind; establish and maintain effective relationships with students and gain their trust and respect.
Wellness and sustainability are important initiatives of Campus Dining. Menus provide options for a healthy diet based on the principles of moderation and variety, and the department operates an Allergy Awareness Program to assist customers with special dietary needs. In addition, through Campus Dining's Sustainability Initiative, consideration is given to the broader context of social and environmental issues surrounding food production, distribution, and preparation. The General Manager works with the Sustainability Manager on these initiatives and assists in developing innovative programs that ensure progress continues in these areas.

Responsibilities
The position of General Manager of Residential Dining involves the ability to successfully balance the needs and priorities of the unit to ensure customer excellence. The General Manager must employ careful oversight of menus and programs while adhering to University policies, regulations, and procedures. The General Manager will be expected to maintain a flexible work schedule that may include evenings and weekends.
Residential Dining Program:
- Ensures proper inventory, billing, scheduling, payroll, distribution of overtime and other business office procedures are effectively and efficiently implemented in compliance with University policies and procedures.
- Directly supervises management positions.
- Monitors annual and monthly budgets.
- Supports and takes leadership in the department's sustainability and wellness initiatives.
- Ability to make quick decisions in order to maintain department standards and meet the expectations and needs of Princeton students and community members in a fast-paced environment.
- Meets weekly with residential college administration to facilitate catering, special functions or events requiring dining support.
- Meet with students to obtain feedback regarding the dining program.
Residential Talent Management:
- In collaboration with the Executive Chef II, oversee all hiring and scheduling for a dual college facility. Including acquisition, development, motivation, retention, and conflict resolution based on diversity and inclusion of all residential staff. This position requires the ability to build a cohesive team and implement policies and procedures to maintain standards of service.
- Work effectively and collaboratively with team members and union leadership to ensure effective delivery of services to the campus community.
- Maintain direct responsibility for the development and the performance management for all team members.
- In collaboration with the Executive Chef II, assist in developing and training front line team members.
Additional Duties and Responsibilities:
- Survey customers and implement change based upon feedback from students and respond to inquiries.
- Maintain standards of sanitation and safety in compliance with health and safety regulations. Oversee implementation of the unit QA/QC and safety programs
- Ensure proper billing, payroll, and accounting procedures are maintained
- Monitor financial performance.
- Evaluate opportunities to refine services, as well as perform operation analysis and quality control analysis.
- Works with other members of the department to determine summer staffing levels, scheduling and payroll.
- Planning and execution of large scale catering events including reunions and commencement.
Qualifications
Minimum Required Knowledge, Skills & Experience:
- Bachelor's Degree
- Minimum of 8-10 years in progressive leadership/management roles with dining experience.
- Working knowledge of New Jersey State health department rules and regulations or ServSafe
- Knowledge of Local, State, and Federal Nutritional Guidelines
- Ability to manage resources effectively
- Experience managing people
- Reliability and willingness to take initiative
- The ability to work nights, weekends, holidays, etc.

- Knowledge of automated food production and catering systems
- Experience with all Microsoft platforms
- Valid Driver's License
