Executive Chef
The Chef will need to continue serving our great food while improving the kitchen efficiency. We are also looking to add new offerings/specials.
We are seeking an Executive Chef to elevate our kitchen to peak operating performance. The Chef will need to continue the well established quality and consistency of food Russell's Restaurant has delivered for the past 30 years. We are a smaller restaurant (~ 100 seats) with a small kitchen and our menu has not changed very much in the past 15 years. While ensuring returning customers get what they expect, we need to make improvements to the menu to keep up with modern trends. We are a seasonal business and we expect hard work during the busy times. With the seasonality comes extended vacation times; approximately 7-8 weeks annually. The Chef will be responsible for all aspects related to running a professional kitchen. We are only open for dinner and need the Chef to be on-site for most nights. Nights are when everyone is there and harmony between the FOH and BOH is essential. All of our existing kitchen staff are great at their jobs and we are looking for a team player to maintain the respect between our staff. The Chef will have substantial support as most of our kitchen staff has been with us for many years and our Sous Chef has been with us for over 25 years. Everyone is working in parallel to make Russell’s one of the most celebrated restaurants in Vail. This endeavor can be achieved with the help of an energetic, knowledgeable, hardworking and creative Chef.
We are an established restaurant with a highly regarded menu. This would be a great opportunity for a self starter looking for their first kitchen. We are not looking for big egos. Since we are in Vail, this would be a great fit for people who enjoy the outdoors as much as they enjoy their professional craft.
